1 cup Balsamic Vinegar
1/4 cup Honey
3 Large Tomatoes, cut into 1/2'' slices
1 (16oz) package Fresh Mozzarella Cheese, cut into 1/4" slices
1/4 teaspoon Salt
1/4 teaspoon Ground Black Pepper
1/2 cup Fresh Basil Leaves
1/4 cup Extra-Virgin Olive Oil
In a small saucepan, stir balsamic vinegar and honey over high heat. Bring to a boil and reduce heat to low. Simmer about 10-12 minutes, until mixture has reduced. Set aside to cool.
In a bowl or serving plate, place the mozzarella and basil over the tomato slices. Sprinkle with salt and pepper. Drizzle with extra-virgin olive oil and balsamic dressing. Serve immediately.
